Shahi Biryani

Ingredients:
1/2 kg mutton-cut into small pieces
1 cup onions-finely sliced
ghee for frying the onions
1 tsp cumin seeds
1 bay leaf
1/4 cup clotted cream
2 tbsp chopped coriander leaves-to garnish

Mix together and marinate the meat in it for 4 hours
1 cup onions-grated
1 tsp garlic paste
1 tsp ginger paste
1 tsp turmeric
1 tsp black cumin seeds
salt to taste
1 cup yoghurt
1 tsp garam masala

Rice
2 cups basmati rice-cleaned and soaked in water
2 green cardamoms
2 cloves
1/2 tsp black cumin seeds
a piece of cinnamon-broken into smaller pieces
salt to taste
1/2 tsp saffron-soaked in 1/4 cup of warm milk
2 tbsp ghee

Method:
Heat enough ghee in a broad heavy-based pan.
Fry the onions till brown and crisp.

Strain onions from the ghee and transfer on to an absorbent paper and set aside.

In 1/2 cup of the ghee that is left in the pan,
add the cumin seeds and bay leaf,
stir a few times till they change color a little and keeping the heat high,
add in the meat mixture.

Stir-fry meat over high heat till the pieces look opaque.
Lower the heat, partially cover and simmer,
stirring a few times till the meat is tender.

Saute till the water dries up and fat separates.
Add water and cook further, in case meat has not cooked through.
If meat cooks through before the water dries up, uncover the pan,
and let water evaporate over high heat.

Remove pan from stove and add the fried onions,
cream and coriander leaves and mix well.

While the meat is cooking, drain the rice and set aside.
Heat 2 tablespoons of ghee and add the black cumin seeds,
cardamom, cloves and cinnamon.
Stir a few times and add the rice and the salt.

Now add 2 1/2 cups of water, and bring to boil.
Lower heat, cover and let the rice cook for 8 minutes.

Shut off heat, leaving pan on stove.
The rice should be almost done.

Half an hour before serving, divide the rice and meat into halves each.
Take half the meat out of the pan, leaving one layer at the bottom.

Spread this layer well in the pan.
Now cover this with a layer of half the rice, sprinkle half the saffron flavoured milk over it, and then add the second layer of meat and finally the other half of the rice.

Sprinkle the rest of the milk and saffron mixture over rice.
Seal pan with wheat flour and place on a griddle over low flame for half an hour.

Alternatively, arrange in an ovenproof dish and place in a pre-heated oven for about half an hour.

Serve in the same dish or mix gently and transfer on to a serving dish.

Chettinad Urlai Roast

Ingredients:
Chettinad masala
1 grated coconut
10 gm whole red chillies
15 gm coriander seeds
15 gm ginger
15 gm garlic
5 gm cinnamon
5 gm cardamoms
5 gm cloves
3 gm kalpasi bark (stone flower)
3 gm star anise seeds
5 gm black pepper corns
3 gm curry leaves
2 gm turmeric powder

Urlai roast:
1/2 kg boiled small potatoes
1 tsp chettinad masala
2 tbsp oil
4 chopped onions
3 chopped tomatoes
1/2 tsp ginger garlic paste
3 slit green chillies
5-6 curry leaves
1/4 tsp turmeric powder
2 tsp red chilli powder
4 tsp coriander powder
1/2 cup of water
coriander leaves

Method:
Keep boiled and peeled potatoes aside

For the chettinad masala:
gently shallow roast coconut, whole red chillies, coriander seeds, ginger, garlic, cinnamon, cardamoms, cloves, kalpasi bark, star anise seeds, black pepper corns, curry leaves and turmeric powder.

Grind the shallow roasted spices to a fine paste.
The Chettinad masala is ready.

For the main preparation:
heat oil in pan.
Add onions in the pan and saute them till translucent.
Now add tomatoes, ginger garlic paste, green chillies, and curry leaves, turmeric powder, red chillies, coriander leaves and salt.

Pour water and cook the paste till it turns thick.
Then add the boiled potatoes and the chettinad masala.

Cook for 3-4 minutes till it becomes dry.

Urlai Roast is ready.
Garnish with coriander leaves.

Serve hot with rice or appams.

Red Chilli Prawns

Ingredients:
4 large prawns
3 tbsp extra virgin olive oil
1 small bowl chopped garlic
1/4 bowl Kashmiri dried red chillies
salt - to taste

Method:
Clean the prawns and cut the arms and whiskers but keep the heads and shells intact.
Heat the oil in a pan and add the garlic and red chillies.
Cook for about one minute.

Now add the prawns and stir for 30 seconds.
Then leave them to cook for a minute and a half without covering.

As it turns pink in color, switch off the gas.
Serve hot.

Hamburgers and Fries

Ingredients:
250 gm minced mutton
4 tbsp onions - finely chopped
1/2 tsp ginger-garlic paste
1/2 tsp black pepper powder
salt - to taste
oil
3-4 tbsp butter
3-4 burger buns
4 tomato slices
4 onion slices
coleslaw (optional)
mayonnaise (optional)

For French Fries
3-4 large potatoes
salt - to taste
pepper (optional)
oil - for deep frying

Method:
Mix the minced mutton, onion, garlic-ginger paste, salt and pepper together.
Shape the mixture in 3 or 4 round patties and refrigerate for an hour.

Shallow fry these patties by browning both sides over a high heat, then lower the heat and let them cook through and remove.

In the same pan, melt some butter, slit the buns in half and semi-toast them in the butter.
Now make the hamburger with onion and tomato slices, coleslaw or mayonnaise.

Serve with ketchup or mustard and fries.

For French Fries
Peel and slice the potatoes into 'fingers'.
Boil some water with a pinch of salt.

When it boils, add the potatoes, switch off the fire and leave for 5-6 minutes.
Take the potatoes out and drain them well or wipe dry.

Heat oil in a pan and add the potato fingers.
Lower the heat to medium and fry till almost cooked.

Then remove from the oil and drain.
Just before serving fry the same potato fingers over a high heat till golden brown.

Sprinkle some salt and pepper and serve.

MANGALOREAN PINEAPPLE CURRY


Ingredients:
1 kg chicken
1 green mango, chopped
½ pineapple, chopped
½ tsp red chili powder
¾ tsp turmeric powder
1½ tsp palm sugar
oil
salt to taste
fresh coriander for garnishing

Ingredients for dry masala:
1 tsp sesame seeds
1 tsp fenugreek seeds (methi)
1 tbsp grated coconut

Ingredients for tadka:
1 tsp mustard seeds
6-7 curry leaves


Method:
In a pan roast the ingredients for the dry masala, then grind or pound them together.

Blend the pineapple and green mango together into a thick puree.

Sear the chicken in 3 tbsp of oil and some salt till it is half cooked and turns golden brown.
Remove from pan and keep aside.

Pour the pineapple puree into the same pan with the left over oil from the chicken.

Mix in the red chili powder, turmeric powder, salt and palm sugar.

Add the ground dry masala and a dash of water.
Stir well for a few minutes.

Now add the chicken to the gravy and cook till tender.

Heat 2 tsp of oil in another pan.
Saute the ingredients for tadka till they crackle.

Pour the tadka over the chicken.

Garnish and serve hot.

CHICKEN STEW

Ingredients:
1 kg chicken
4 tsp white vinegar
1 potato, cubed
1 onion, chopped
1 tsp garlic, chopped
1 tsp ginger, chopped
2 green chilies, chopped
4 green cardamoms
4-5 cloves
1 inch of cinnamon
2 cups of coconut milk
8-10 curry leaves
oil
salt to taste

Method:
Boil the chicken in a pressure cooker along with white vinegar, salt, potatoes and water.
Keep aside after one whistle.


Heat 3 tsp of oil in a pan.
Saute the onion, garlic, ginger and green chilies till the onion turns transparent.


Lightly pound the cardamoms, cloves and cinnamon.
Add the spices to the sauteed onions.


Add the boiled chicken to the onions along with the coconut milk.
Cook well till the chicken is tender.


For the tadka, heat a tsp of oil in another pan.
Add the curry leaves to it.
Stir well till the curry leaves begin to curl.


Add the tadka to the chicken and serve hot.

Sugarfree Mango and Black Pepper Cheese Cake

Ingredients
150 gm Cream Cheese
50 gm sugarfree Natura
250 ml cream
180 gm Mango puree
1 tbsp black pepper
3 gm gelatin

For Biscuit base
100 gm sugar free biscuits
50 gm melted butter

Method
Crush the biscuits and add in the melted butter, refrigerate for 15 mins.

In a large bowl, fold in the cream cheese, sugarfree natura, cream, mango puree, black pepper and gelatin.

Pour it over biscuit base and refrigerate for an hour and serve cold.

Chicken Afghani

Ingredients:
1 chicken-cut into pieces
1 tbsp magaz (melon seed)
1 cup kaju (cashew nuts)
1 tbsp khus khus (poppy seed)-soaked for 1 hour
1 cup cream
2 tbsp butter
2 tsp powdered black pepper
5-6 chhoti elaichi
salt to taste

Method:
Grind together the magaz, kaju, khus khus, pepper and elaichi.

Prick the chicken pieces in 2-3 places.
Mix with the rest of the ingredients and marinate for 5-6 hours.

Grill in a tandoor or electric grill till golden and serve hot.

Scotch Eggs (Nargisi Kabab)

Ingredients:
1/2 kg pork sausage meat
1 peeled and chopped onion
1 tsp mixed, dried herbs
salt and pepper
4 hardboiled, shelled eggs
flour for coating
1 beaten egg
150 gm dried breadcrumbs
oil for deep frying

Tomato salad
4 sliced tomatoes
1 sliced onion
3 tbsp oil
1 tbsp lemon juice
1/2 tsp chopped garlic
pinch mustard powder

Method:
Mix sausage meat, onion, herbs and seasoning together.
Press mixture firmly around eggs.

Roll in flour; dip in egg and coat with breadcrumbs.
Chill for 1 hour.

Deep fry for about 10 minutes until crisp.
Drain and serve with salad.

For the salad, arrange tomato and onion on a plate.

Whisk remaining ingredients together.
Pour over tomatoes.

Season and serve.

Fried Boneless Chicken

Ingredients:
350 gm boneless chicken - diced
1 egg - slightly beaten
1/2 cup corn flour
1/2 tsp garlic paste
1/2 tsp ginger paste
oil
salt- to taste

Method:
Mix together the chicken, egg, corn flour, garlic and ginger paste, salt and enough water so that the chicken pieces are 'coated' with the batter.
Keep aside for 1/2 hour.

Heat the oil and deep fry the chicken pieces over high heat to begin with and then lower the heat till chicken is cooked through.

Drain on absorbent and serve.

Masala Vada

Ingredients:
1/2 cup chick peas daal
1/2 cup Soya bean
green chillies - to taste
2 onions - chopped
2 tbsp ginger - grated
salt - to taste
refined oil

Method:
Soak soybeans overnight and chick peas for two hours.
Drain water completely and combine both the beans.

Grind the beans and green chillies together with as little water as possible into a coarse batter.

Add chopped onions, grated ginger, and salt to the batter and mix well.

Make the vadas with the batter (approximately two tbsp for each vada) and deep fry in hot oil till golden brown.

Serve hot with tomato ketchup.

Whole Wheat Cake

Ingredients:
1 cup whole wheat flour
1 cup jaggery or Gur ki shakkar (lal shakkar)
1.5 tsp baking powder

1/3 cup oil
2 eggs
1/2 cup water
1/2 tsp almond essence
1/2 cup walnuts-chopped and dusted with flour
(For 7inches - 8 inches round cake tin) Oven temp: 350 F- 180 C


Method:
Place the flour, jaggery, baking powder, butter and eggs in a bowl and beat well.
Add the water and almond essence.


Beat till smooth.
Mix in the walnuts.
Place the mixture into the tin and bake in the pre-heated oven for 35-40 minutes or till a knife pierced in comes out clean.

Teesra Prawn Cocktail

Ingredients:
10 tiger prawns, blanched
6-7 tbsp of eggless mayonnaise
2 tbsp of tomato sauce
3 tsp of fresh parsley, finely chopped
few drops of chilli sauce
2 tbsp olive oil
1 iceberg lettuce
2 tomatoes, sliced round
1 boiled egg, cut into 4 slices
6-8 black olives, chopped
salt and pepper to taste



Method:In a bowl mix the mayonnaise, tomato sauce, chilli sauce, salt, pepper and 1 tsp of parsley together.

Chop only six prawns into small pieces and add to mixture.

Marinate four prawns with olive oil, salt, pepper and 1/2 tsp of parsley.

Chop or tear the lettuce leaves into smaller pieces.
Place a small hand full of leaves at the base of a martini glass.

Top it with three spoons of the cocktail sauce.

Place four tomato slices around the sides and sprinkle some black olives and parsley.

Complete the garnish with a slice of boiled egg and a marinated prawn.

Repeat the process for the other glasses and serve chilled.

Butterscotch cookies

Ingredients:
1/4 cup Butter
1/2 tsp Vanilla Extract
1 cup brown sugar
1 Egg
1/3 cup Walnuts (chopped)
3/4 cup Maida
1 tsp Baking Powder
1/4 tsp Salt

For Frosting:
1/4-cup Brown Sugar
2 tbsp Butter
2 tbsp Milk
1 cup Confectioners Sugar

Method:
Preheat oven.
Grease baking pan.
In a medium bowl, cream brown sugar and butter together until smooth.
Beat in the vanilla and egg.

Mix the baking powder, flour, walnuts and salt,stir into the sugar mixture.
Smear onto the pan.
Now, bake it for half an hour in the preheated oven.

Chill it completely before frosting.
Add together all the ingredients of frosting except confectioner’s sugar in a small saucepan over low heat,Gradually add the confectioners’ sugar

Sikkim Momos

Ingredients:
2 Cups maida
1/2 Cabbage, grated
1/2 tbsp Salt
For Chutney:
5 Garlic flakes, chopped
5 Red Chillies, chopped
Little amount of vinegar
A pinch of baking powder

Method:
Add maida and baking powder along with water.
Make dough out of it.
Leave the dough overnight.

Roll out medium sized chapattis from dough.
Cut into two halves from the middle like samosas.

Fill the momos with grated cabbage and salt to taste.
Steam these momos in an idli utensil.

Steam for about 10 minutes.
You can also deep fry them.

To prepare chutney, churn garlic, red chilli and vinegar in a mixer.
Serve the momos with chutney.

Kaapa - nutritious green curry from Uttaranchal

Ingredients:
1 kg Spinach
250 gms Curd
2 tsp Chilly Powder
1 tsp Turmeric Powder
2 tsp Hot Spices
1 tsp Cumin seeds
1 pinch Asafoetida
70 gms Butter
Salt to Taste
1 tsp Rice Paste

Method:
Wash the spinach and chop it roughly and boil.
Heat the butter, add cumin seeds and asafoetida.
When seeds crackle, add chilly powder and turmeric powder.

Fry the spices well.

Add boiled spinach and cook a little.

Add beaten curd and required amount of water and thicken with rice paste.

Cook well, add salt and hot spices and serve.

Bhapa Illish (Bengal Fish Recipe)

Ingredients:
1/2 Kg Hilsa cut in big pieces
3 green chillies
1/2 cup mustard seeds
pinch of turmeric
2 tbsp grated coconut
salt to taste

Method:
Soak the mustard seeds in some warm water for about half hour before grinding them.
Marinate the fish pieces in salt.

Grind the mustard seeds, 2 green chillies and coconut to a fine paste.

Spread the fish out in a single layer in the pressure cooker separator containers.
Mix a pinch of turmeric with this paste and pour over the fish such that the pieces are all coated in the paste.

Pour a generous helping of mustard oil on the fish and paste.
Put in the pressure cooker and steam for 2 or 3 whistles, Serve.

Crunchy Potato

Ingredients:
1 potato
1 tbs coconut oil
1 tsp mustard seeds
4-5 finely sliced green chillies
5-6 curry leaves
Half a bowl of cashew nuts
1 cup grated coconut
Salt
Water

Method:
Cut the potato in even size pieces and add some salt and blanch in water.

Heat coconut oil in a pan, add mustard seeds, green chillies, curry leaves and cashew nuts.

When the cashew nuts start turning brown, add the potato pieces, salt and grated coconut.

Saute well and serve hot.

Garlic chutney

Ingredients:
1 cup Garlic cloves (peeled and minced)
1 cup Coconut (grated)
2 tbsp Red Chilli Powder
Handful of Sesame seeds( roasted)
Salt to taste

Method:
Mix the garlic with the grated coconut.
Add roasted sesame seeds, salt and chilly powder and grind in a grinder.
Garlic Chutney is ready.

Garlic chutney can be eaten with parathas ,puris or chapati.

Sweet Corn Soup

Ingredients:
2 tbsp sweet corn
1 tbsp sugar
50 gm chicken
1 egg
1 tsp corn flour
2 cups stock
salt - to taste


Method:
Put the stock in a wok and add sweet corn and chicken and boil for a while.


Add sugar and salt and later add corn flour for thickness.


Take out and keep aside. Now add the egg and cook for a while.
Serve Hot.

Chettinad Chicken

Ingredients:
1 kg Chicken (washed and chopped into fine pieces)
3/4 inch Ginger
2 tsp Ginger-Garlic paste
1½ tsp Black Peppercorns
1½ tsp White Poppy seeds
2 tsp Coriander Powder
1 tsp Cumin Seeds (Jeera)
2 twigs of Curry Leaves
1 tsp Turmeric Powder
4 Onions (medium-sized)
2 tsp Fennel Seeds (Saunf)
¾ cup Tomatoes (chopped)
4 Green Chilies
Salt to taste

Method:
Smear the chicken pieces with turmeric powder and salt.
Now heat the oil in a large pan.
Add cumin seeds, fennel seeds, black peppercorns, poppy seeds, green chilies, and curry leaves to it.

Saute and take out the spices. Keep it aside.
Now add finely chopped onions and ginger-garlic paste in the remaining oil.
Fry till the onions turn golden brown.

Now tomato, coriander powder, sauted spices and chicken to the above.
Add salt according to taste and fry the mixture for another 5 minutes.
Put the lid and let the chicken cook for about half an hour.

The gravy would turn almost dry.
Occasionally add little water, if required.
When the chicken becomes tender, put off the flame.

Serve piping hot.

Hyderabadi Biryani

Ingredients:
½ kg Basmati Rice (semi-cooked)
1 kg Boneless Meat (washed and chopped into square pieces)
500 gm Curd
4-6 tsp Ginger-Garlic Paste
4-6 Green Chilli
2 Big Onions (sliced)
¼ cup Lime Juice
½ tsp Red Chilli Powder
A pinch of Caraway Seeds (Shahi Zeera)
5-6 twigs Coriander Leaves (chopped)
5-6 twigs Mint Leaves (chopped)
2 pinch Saffron
1-2 Cinnamon
2-3 pods Cardamom
2-3 drops Saffron Color
1-2 pods Clove
2 cup Oil
Salt to taste
2 tsp Ghee

Method:
Smear the pieces of meat with ginger-garlic paste.
Keep them to marinate for an hour.
In the meanwhile, fry the sliced onions in a heated pan on low flame till light brown.

Let the onions cool down and crush them.
Now add crushed fried onion (only three-fourth), curd, red chilli powder,
cinnamon, green chilli paste, cardamom, shahi zeera, coriander leaves,
clove, saffron water, mint leaves and salt to the marinated meat.

Leave the meat as it is for 1 hour.
Make the mixture of aromatic water by adding salt (one tsp), cinnamon, clove, cardamom, mint leaves and coriander leaves in a little water.
Now spread a layer of semi-cooked rice in a heavy bottomed vessel.

Add saffron color, limejuice, ghee and the remaining crushed onions over the layer of rice.
Spread a layer of marinated meat over this, and again spread the remaining semi-cooked rice.

Now add the aromatic water in a circular motion over the rice layer.
Now tightly cover the vessel with a lid. Keep it on a low flame.

Remove the vessel from the flame exactly after 15 minutes.
Hyderabadi Biryani is ready to eat.

Cherry Almond Tart

Ingredients:
½ cup finely ground blanched almonds
½ cup sifted powdered sugar
¾ cup all-purposed flour
½ cup unsalted butter chilled and cut into small pieces
1 large egg lightly beaten
1 can cherry pie filling
2 tsp orange liqueur
1 tsp finely grated orange zest

Method:
Combine almonds, powdered sugar and flour in a bowl or food processor,
scatter the butter on top and mix or process it till the mixture resembles coarse crumbs.

Add the egg and mix just until the dough gathers into a ball.
Divide the dough into two pieces.
One slightly larger than the other and shape it into flattened discs.

Wrap in plastic cling film and refrigerate for 30 minutes.
Pre-heat the oven at 375`F.

Combine the cherry pie filling, liqueur and orange zest together.

Roll out the large disc of pastry into an 11-inch circle,
And place in an 8-inch tart pan which has a removable bottom and trim the edges.

Roll out a smaller disc of pastry into a 10-inch circle cut into ¾ inch wide strips for a lattice top.


Spoon filling into tart pan.
Then arrange the strips of dough into a lattice pattern on top of the filling.

Trim to fit and gently press ends into pastry shell.
Bake until pastry is golden brown for around 40-45 minutes and then cool on a wire rack for 10 to 20 minutes.

Remove side of pan and let cool completely.

Dust with powdered sugar before serving.

John Dory Summer Roll

Ingredients:
juice of 3 lemons
1/4 cup fish sauce
1 english cucumber - julienned
1 red bell pepper - julienned
2 cups rehydrated mung bean noodles (or rice noodles)
1 fresh thai bird chile - sliced thinly
8-10 slices john dory
1 package 8-inch banh trang (rice paper wrappers)

Method:
In a medium bowl, combine lemon juice and fish sauce.

In a large bowl, combine cucumber, bell pepper and noodles.
Add half the lemon-fish sauce mixture and toss to coat.

Pour other half into a dipping bowl and add sliced Thai bird chiles.

Place a rice paper wrapper in a circular baking dish and cover with hot water.
Add wrappers one by one and soak until just softened, about 30 seconds.

Remove from water and place on a lint-free towel to drain and get slightly sticky.

To form summer rolls, lay rice paper on flat surface,
lay piece of smoked salmon down center, and top with noodle mixture.


Roll tightly, tucking in ends.
Let rest, seam-side down, before slicing.

Bias-slice in half and serve with dipping sauce.

Warm Frisee Salad

Ingredients:
1 bunch scallions - sliced
2 cups Shiitake Mushroom - sliced with stems removed
1 tbsp Dijon mustard
juice of 1 lemon
juice of 2 limes
½ cup extra virgin olive oil
1 tbsp truffle oil
1 large head frisee
4 poached eggs
Kosher salt
freshly ground black pepper

Method:
In a pan saute the scallions and Shiitake Mushroom for about two minutes in extra virgin olive oil, until softened.

Add Dijon mustard and deglaze with citrus juices,
scraping up any caramelized bits in the pan.

Whisk in extra virgin olive oil and truffle oil.

Take frisee in a large bowl and pour hot vinaigrette over salad to wilt, tossing to coat.
Divide salad among four plates, top each with poached egg and serve.

Peanut And Pineapple Salad

Ingredients:
½ cup peanuts, shelled, parboiled
½ cup water chestnuts, boiled, peeled, halved
½ cup cucumber peeled, chopped
½ cup pineapple, peeled, chopped
½ cup apple, chopped
½ cup paneer, cubed
1 cup roasted makhana

For dressing:
1 green chili, finely chopped
1 tsp coriander leaves
½ piece ginger crushed
2 tbsp watermelon seeds, peeled
1 & ½ tsp lemon juice
1 tsp sugar
½ tsp pepper powder
1 tsp oil
salt to taste

Method:
In a bowl, take peanuts, pineapple, apples, paneer, and cucumber.
Mix it well, Set to chill.


Take water, sugar, lemon juice, green chillies, coriander,
melon seeds, ginger, black pepper, two drops of oil, Mix it well.


Put the dressing in the salad.
Mix well, Add roasted makhana, Serve.

Whole Wheat Salad Wrap

Ingredients:
4 whole wheat tortillas
¾ cup feta cheese, crumbled
8 cherry tomatoes, sliced in half
10 black olives, sliced
½ red onion, thinly sliced
1 cucumber, diced
2 tbsp balsamic vinegar
1 tbsp fresh parsley, chopped
1 clove garlic, minced
2 tsp olive oil
¼ tsp salt
¼ tsp pepper


Method:
In a medium bowl, combine all of the ingredients except for the tortillas.
Keep aside for 10 mins.

Drain off liquid and divide salad mixture among the tortillas.

Fold bottom of tortilla partially over filling and then roll up.

Mini Mushroom Pizza

Ingredients:
2 pizza base
1 cup cheese
1 cup mushrooms
1 cup sweet corn kernels

For pizza sauce:
3 cups Tomato puree
2 tbsp Onions
1 tsp Garlic
1 tsp Rosemary
Salt and pepper to taste

Method:
Take pizza base on a counter top.
Use a cookie cutter to cut small circles and make dimples in it using a fork.
Pop it in the preheated oven and leave for 5 mins.


In a pan, saute the garlic and onion.
Add tomato puree, rosemary, salt.

Cook till the sauce is nice and thick.
A pinch of sugar can be added to sweeten the sauce a bit.


Take toasted pizza bases, pour some sauce.
Top it with mushrooms, sweet corn kernels and grated cheese.

Bake in the oven for 2 mins till the cheese melts.

Serve.

Tandoori Pomfret

Ingredients:
1 tsp yogurt (low fat)
1 tsp mustard paste
½ tsp red chilli powder
¼ tsp turmeric
½ tsp salt
½ tsp mustard oil
3-4 tsp lemon juice

Method:
In a bowl, take yoghurt, mustard paste, red chilli powder,
turmeric, salt, mustard oil, lemon juice and mix well.

Cut slits into the fish.

Marinate the fish with the paste.

Grill the fish till it is crispy and golden brown.

Serve on a platter with lettuce and lemon wedges.

Seafood Crepe

Ingredients:

For seafood batter:
1 egg
200 gm milk
pinch of salt
4 tsp flour
3 tsp water
basil leaves

For seafood filling:
2 tsp oil
1 tsp chopped garlic
2 tsp chopped onion
prawns
30 gm squid
50 gm tuna fish
pinch of salt
½ tsp green chilly
pinch of julien ginger
4 tsp tomato puree

Method:

For seafood batter:
Blend egg, milk, salt, flour, water and basil one by one,
cover them and keep it in the freezer for 30 min.


For seafood filling:
Mix oil, saute garlic and onion.
Add prawns, squid, tuna fish saute.

Let them simmer for sometime and add salt, green chilly and julien ginger to it.
Simmer them again for few minutes.

Add tomato puree and simmer them till it becomes brown.


Presentation:
Remove seafood batter from the freezer and pour it in the pan,
Flip it to the other side when it gets brown.

Add seafood filling in the seafood batter.
Put Cheese on it and fold it.

Chicken Omelette with Mushrooms

Ingredients:

For Chicken Omelette:
2 tsp olive oil
½ tsp garlic
1 tsp chopped onion
¾ tsp chopped celery
80 gm chopped chicken
¾ tsp green chilly
¾ vegetable stock
2 tsp Soya sauce

For Saute Mushroom:
1 tsp butter
1 tsp garlic
½ cup mushroom
¾ glass vegetable stock
1 tsp basil
pinch of salt
pepper powder

For Egg white omelet:
1 tsp oil
3 egg white

Method:

For Chicken filling for omelet:
Saute garlic, onion and celery in olive oil.
Add small pieces of chicken, green chilly and Pour vegetable stock for flavour

And saute them all together for 10 minutes.
Add soya sauce and avoid using salt.

Saute them all together till it gets dry.

For Saute Mushroom:
Saute butter and garlic in the pan.
Add mushroom and vegetable stock for flavor.
Saute them all together.

Add basil and pinch of salt for taste.
Add little pepper for punch and saute them all together till it gets ready to eat.

Presentation:
Pour olive oil in the pan and put the white egg in it.
Let it cook for sometime and then put the chicken filling on top of it and roll it from both the side.

Mangalorean Prawn Curry

Ingredients:
½ kg prawns (medium sized)
2 tbsp coconut oil
1-cup coconut (grated)
3 tsp tamarind extract
7 red chilies
½ tsp asafoetida (Heeng)
1 tsp turmeric powder
salt to taste

Method:
Grind the coconut, red chilies and tamarind extract together into a smooth paste.

Heat the coconut oil in a pan then add hing and turmeric powder.

Place the prawns in the pan and gently stir.
Cook for 30 seconds or till half cooked.

Add the ground paste, salt and two cups of water.
Cook for two minutes on low flame.

Serve hot.

Prawn Coconut Curry

Ingredients:
8 medium sized prawns
1 cup tamarind paste
6-7 black peppercorns
2 tsp garlic paste
2 tsp ginger paste
1 tsp cumin seeds
1/2 tsp mustard seeds
4-5 cloves chopped garlic
1 tsp red chilli powder
4 tbs refined oil
1 cup chopped onions
Juice of 1 lemon
1 tbs chopped green chillies
1/2 tsp turmeric
1 up coconut milk
2tbs chopped coriander leaves
salt
water

Method:
De shell and De vein the prawns.

Marinate the prawns with a mixture of ginger paste, garlic paste,
red chilli powder, salt and lemon juice.

Heat refinedoil in a pan, add chopped garlic and saute.
Add black peppercorns, cumin seeds, mustard seeds and stir.

Then add onions,Green chillies, red chilli powder,turmeric powder and saute.

Now add tamarind paste, salt and the prawns to the curry.
Stir well.Add coconut milk.

Garnish with the coriander leaves and serve hot.

Mushroom Kofta In Tomato Gravy

Ingredients:
Finely chopped spinach
Finely chopped garlic
1 cup crushed cottage cheese
6-7 big tomatoes
3-4 sticks cinnamon
2 tsp garlic paste
2 tsp ginger paste
3-4 green chillies
1 tsp black peppercorns
1 cup of cashew nuts
1/2 tbsp wheat flour
1 tsp corn flour
1 tsp cumin seed powder
A pinch of cinnamon powder
1/2 cup of cream
1 tsp red chilli powder
2 tbsp desi ghee

For the filling:
2 tsp ginger paste
1 cup white button mushrooms
8-10 finely chopped green chillies
Juice of 1 lemon
2 tsp honey
Cooking oil
Salt
Water

Method:
Wash and chop spinach leaves.
Take oil in a pan, add garlic, spinach and salt.

Remove and add paneer, corn flour, wheat flour and salt.
Mix it with spinach and make dough.

Flatten the dough and make small koftas.

For the filling:
Take oil in a pan, add ginger paste, green chillies,
finely chopped white button mushrooms and salt.
Saute and remove from fire.

Add lemon juice and honey and mix well.

Now put the filling inside the koftas, seal the edges and fry them.

For the tomato gravy:
Chop the green chillies.
Cut the tomatoes into quarters.

Take desi ghee in a pan, add cinnamon, garlic paste, ginger paste,
black pepper corns, tomatoes and salt and saute.

Now add water and leave it to simmer.
Once the puree is completely cooked, leave it to cool and extract the juice.

Take oil in a pan, fry cashew nuts.
Mix them with cold water and grind them to make a soft paste.

Heat desi ghee in a pan and add garlic paste and ginger paste.
When garlic turns brown, add tomato puree, cashew paste and cumin seed powder.

Stir and leave it to simmer.

Now add cinnamon powder, cream and red chilli powder.
Stir well and add the koftas.

Cook for some time and serve hot.
