Chocolate Pudding

Oven Temp: 350F/180C
1 cup refined flour
1 3/4 cup castor or powdered sugar
2/3 cup butter
2/3 cup cocoa powder
1 cup milk
1 tsp vanilla essence
2 tsp baking powder
1/4 tsp salt
3 eggs
an oven-proof serving dish, 8 inch square or 9 inch round, greased

Sift the flour, cocoa, and baking powder, and transfer into a mixing bowl.

Add the salt, sugar butter, milk and vanilla.

Beat till well blended. 

Add the eggs and beat till smooth.

Pour mixture into the prepared dish and bake in the pre-heated oven for 25-30 minutes, till crisp on top.

Serve hot (with ice-cream - optional).
